Sparkling Rosé Paloma

Underwood Rosé Bubbles Paloma Cocktail

We’re happy to be working with Alyson of @wildfolklore and author of The Flower Infused Cocktail on a series of cocktails. This cocktail is a refreshing spin on the Paloma.

We’re imagining enjoying this drink while sitting on a beach somewhere warm, but if you happen to be on the coast in the Pacific Northwest mid-summer with your raincoat on(!), this cocktail will still give you the feeling of summer.

Enjoy with friends, and a rice and bean bowl filled with summer produce straight from the farmers’ market.

Underwood Rosé Bubbles Paloma

SPARKLING ROSÉ PALOMA

2 oz Blanco tequila
2 oz grapefruit juice
1/4 oz orange juice
1/4 oz lime juice
1/2 oz simple syrup
1/4 oz Campari
Underwood Rosé Bubbles
grapefruit slice for garnish

Add tequila, grapefruit juice, orange juice, lime juice, simple syrup, and Campari to a shaker and shake over ice until chilled. Strain into a glass over ice and top with Rosé Bubbles. Garnish with sliced grapefruit and a pinch of flake salt.

Negroni Noir

Our newest cocktail is a play on the classic Negroni, a favorite among the Union Wine Co. team. We worked with Alyson of Wild Folk, who released a cocktail book last year titled: The Flower Infused Cocktail.

NEGRONI NOIR

1 oz gin

1 oz Gran Classico

1/2 oz sweet vermouth

1/2 oz pinot noir syrup

In a mixing glass, stir gin, gran classico, sweet vermouth, and pinot noir syrup with ice until chilled. Strain into your prepared glass and zest with orange peel.

Underwood Negroni Noir - The Flower Infused Cocktail

PINOT NOIR SYRUP

1 cup Underwood Pinot Noir

1 1/2 cups demerara sugar

1 cinnamon stick

1 strip of orange peel

1 tbsp dried osmanthus flowers

Combine pinot noir and sugar in a small pot and bring to a gentle simmer over medium heat. once the sugar has dissolved completely and the syrup has thickened, remove from the heat. Add the cinnamon stick and orange peel, cover, and steep for 30 minutes. During the last 10 minutes, stir in the osmanthus flowers. cool completely before using.

A Bubbles Cocktail to Celebrate the End of 2021

It’s December 1st and we kind of can’t believe it. The year has been another wild one, but we still have a lot to celebrate. All of the fruit that came in for our 2021 vintage was incredible, the harvest had its bumps but was still one for the record books. We love kicking off the final month of the year with our Underwood Bubbles and here’s a cocktail to help you get through the end of 2021. Enjoy one today and keep this cocktail in your back pocket to ring in 2022.

St. Germain Bubbles Cocktail

1 ounce (2 tablespoons) St. Germain

1 ounce (2 tablespoons) gin

1/2 ounce (1 tablespoon) lemon juice

1/2 ounce (1 tablespoon) simple syrup

3 ounces (6 tablespoons) Underwood The Bubbles (about 1/2 glass)*

Underwood Wine Cocktail

Place St. Germain, gin, lemon juice, and syrup in a cocktail shaker with ice. Shake 15 seconds until cold. Strain the liquid into a glass of your choice.

Top off the glass with Bubbles (no need to measure). Garnish and serve. (Note: You can also make a large batch of St. Germain, gin, lemon juice, and syrup ahead if desired, then measure out 6 tablespoons per glass.)

A Blackcurrant Cocktail 3 Ways

Underwood Wine and Current Cassis

While we’re a wine company and have an interest in all things wine, we’re always keeping our eyes open for a new liquor or liqueur brand to use to create a wine cocktail. Earlier this year we came across Current Cassis. Their beautifully subtle, classic yet modern label caught our eye immediately. Current Cassis makes a botanical blackcurrant liqueur in the Hudson Valley of New York State. Current Cassis on its own is slightly bitter, yet sweet, so… a perfect balance. There are also decent tannins that complement the wine.

Their liqueur is similar to a classic french liqueur Crème de Cassis. While none of us here at Union are trained bartenders, we went to our friend Google to see if there were any wine and crème de cassis cocktails out there. We found that there are actually several, and they are extremely simple to make. The most common and most classic cocktail is a Kir Cocktail. It is simply a pour of wine, 5-6 ounces, and a half-ounce or so of crème de cassis. There are many riffs on this cocktail and while we could have tried it with all five of our Underwood wine offerings, we chose to give it a go with Underwood Pinot Gris, The Bubbles, and Pinot Noir.

1/2 ounce crème de cassis
5 to 6 ounces chilled Underwood Pinot Gris

Measure and pour crème de cassis and wine into your favorite glass, stir and enjoy.

Grab a bottle and a few of our wines to see which combination you like best. Current Cassis is slowly making their way to the west coast, but you can find their liqueur at a handful of online retailers.

Rosé Sangria for Summer

Summer Rose Sangria

Summer is here and we are all about it. The days are longer, warmer, and full of hope as more and more of us are able to see our friends and family after a long year of trying to stay safe. So let’s celebrate with an easy, picnic ready Rosé Sangria! With fresh fruit, coconut sugar, and Grand Marnier, this simple and refreshing sangria is sure to be a favorite all summer long. We like to pair this recipe with a good friend, a picnic blanket, and a shady spot in our local park.

Ingredients:
1 orange, cut into wedges
2 cups strawberries, halved
2 tablespoons coconut sugar
2 cans of chilled Underwood Rosé
1/3 cup Grand Marnier
1 handful of fresh mint leaves
1 lemon, sliced
1 mango, peeled & cubed
1/2 cup blackberries
Sparkling water for serving
Skewers

Summer Rose Sangria

Directions:
Place oranges and strawberries in the bottom of a large mason jar or portable glass pitcher. Add the coconut sugar and stir.
Let sit for approximately 15 minutes.
Pour in the rosé and Grand Marnier. Add the mint and lemon. Stir and place in the fridge for 1-3 hours.
Pour the sangria into glasses with ice and top with sparkling water. Add the mango cubes, blackberries, and some fruit from the pitcher to skewers for garnish (and snacks).
Enjoy!
